Noble Granola
Preheat oven to 275 degrees.
In a large bowl, stir together:
8 cups rolled oats
2 cups grapenuts cereal
2 cups wheat germ
2 cups shredded coconut
1 cup slivered almonds
1/2 cup packed brown sugar
In a separate bowl, combine:
1 cup melted coconut oil (or other healthy oil)
½ cup honey
½ cup pure maple syrup
1 teaspoon each of vanilla and almond extract
1 teaspoon salt
1 teaspoon cinnamon
Add to the oat mixture and mix well. Pour onto two greased baking sheets.
Bake for 30 minutes, stirring every 15 minutes. Turn the oven off and let sit a few hours (or overnight).
Note: you can also add 1 cup of raisins or chopped dried fruit after baking and before letting the granola sit in the oven.
